We make the macarons and freeze them. It sounds a bit odd to freeze such a delicate cake but it really improves the quality and helps transport them. Once you’ve received the macarons keep them in the fridge. They will be happiest in there and will keep for up to 7 days. The macarons are best eaten at room temperature. So (if you can wait that long) bring them out of the fridge for an hour or so before eating.
